While they’d be a pain to write by hand, neither of those characters is actually that hard to remember - 䨻 is 雨 (rain) four times, and 龘 is 龍 (dragon) three times.
The character widely considered the most complex has 58 strokes and isn’t in official dictionaries. It describes a specific type of noodle and it looks like this:
